Rhubarb means Spring. Pioneer homemakers planted it, no doubt to give them something to look forward to after a long winter. With precious sugar added to take the bite out of the red- green stalks, rhubarb was baked into pies, cobblers, and in our case, cooked into a deeply flavorful jam. We caught Spring in a bottle.
